- 6 tbsp unsalted butter
- 6 tbsp all-purpose flour
- 4 cups whole milk, warmed
- 2 cups shredded cheddar cheese
- 1 cup sharp white cheddar, shredded
- 1 cup gouda or mozzarella, shredded
- 1 tsp paprika
- Salt and pepper, to taste
- Optional: gel food coloring (orange) and green food coloring for decoration

- Thin mozzarella strips (for spiderweb)

- Cook the pasta
Bring a large pot of salted water to a boil. Add the macaroni and cook until al dente. Drain and toss with a little oil to prevent sticking. - Make the roux
In a saucepan, melt the butter over medium heat. Whisk in the flour and cook for 1–2 minutes, stirring constantly.
- Build the cheese sauce
Slowly whisk in the warm milk until smooth and thickened. Off the heat, stir in cheddar, white cheddar, and gouda or mozzarella until melted. Season with paprika, salt, and pepper.
- Cook the pasta

Tint part of the sauce with orange gel food coloring. For a spooky effect, tint a small portion green for a slime swirl.
- Assemble the dish
Combine the pasta with the cheese sauce in a baking dish. Add mozzarella pearls with olive slices to create eyeballs. Lay mozzarella strips in a web pattern. Swirl the green sauce for decoration. - Bake
Bake at 375°F (190°C) for 15–20 minutes until bubbly and golden. Rest for 5 minutes before serving.
